Pisco Sour with Egg Whites and

4-5 oz fine granulated sugar
8 oz lime juice
16 oz Pisco brandy
1 1/2 Crushed ice

We have a Peruvian frined who introduced us to Pisco. This Pisco Sour drink was modified from some that I found on the internet. I like that it uses plain white sugar instead of simple syrup. The blender makes it super-simple to make, and gives it a beautiful froth from the egg whites. you can modify to use just 3 egg whites for less froth. Fresh lime juice is always best, and I included some of the lime pulp. I also used about 1/3 cup bottled lime juice beacuse I didn't have quite enough fresh limes. I didn't use Angustura bitters, but I suppose you could add this if you wanted. This drink got rave reviews from my guests.Blend together egg whites and white sugar in blender for 15 seconds. Add Pisco and lime juice and blend for 15 seconds. Put crushed ice into shaker and add Pisco sour mix to about 2/3 full. Shake and strain into small glasses. Garnish with a sprinkle of brown sugar. You can also garnish with a drizzle of browned, melted butter. Repeat shaker process with rest of mix, only adding more crushed ice as needed. Makes about 16 servings - enough for 8 people, 2 servings each.
